Eskimos = Lolly Cake!! This easy recipe isn’t good for the waistline but sure is a classic Kiwi favourite!
Be sure to include a bag of Pascalls Eskimos from our Edible Hampers range!
LOLLY CAKE
- 100g butter, melted
- 1 x packet of Malt biscuits (250g) – crushed in a bag with a rolling pin or blitzed in a food processor
- 1 x packet of Eskimos, roughly chopped
- 1/2 tin of Sweetened Condensed Milk
- 50g chocolate buttons, melted (optional)
- Coconut
Add Malt biscuits and Eskimos to melted ingredients of butter, condensed milk and optional chocolate. Shape into a log and roll into coconut. Refrigerate until firm (3-4 hours) and then cut into rounds.
